Creamy oat porridge with apple and blueberries

Cottage cheese stirred through oats gives you a creamy, yummy texture, and with the fruit on top and a hint of cinnamon, this is sure to be a tummy-pleaser.


Ingredients
Rolled oats, dry
⅓ cup(s), (30g)
97% fat-free cottage cheese
⅓ cup(s), (80g)
Apple(s)
½ medium, finely chopped
Fresh blueberries
¼ cup(s), (40g)
Ground cinnamon
½ tsp
Instructions

Place oats in a small saucepan with 1 cup (250ml) boiling water. Stir over medium heat for 4-5 minutes or until the mixture boils and thickens. Cover and set aside for 5 minutes or until thick and creamy. Transfer to a serving bowl.

Whisk half the cottage cheese with 1 tablespoon water in a bowl until smooth. Add to the oats and stir until smooth. Stir in three-quarters of the apple. Top with the blueberries, remaining apple and remaining cottage cheese. Sprinkle with cinnamon to serve.
