Creamy horseradish jacket potatoes

Golden jacket potatoes filled with cream cheese and horseradish mash
Light cream cheese
⅓ cup(s), (80g)
1 x 3 second spray(s)
Grated parmesan cheese
25 g, (1/3 cup)
2 tbs, finely chopped
- Preheat oven to 220°C or 200°C fan-forced. Lightly spray potatoes with oil and wrap in foil. Bake for 30 minutes. Unwrap potatoes and bake for 30 minutes or until golden and tender. .
- Cut a slice from the top of each potato. Using a teaspoon, scoop flesh into a bowl, leaving a 5mm border.
- Mash flesh with light Cream Cheese and horseradish cream. Spoon mixture into potato shells. Place on a baking tray and sprinkle with parmesan cheese. Bake for 15 minutes or until heated through.
- Sprinkle with fresh chives. Serve
