Cottage cheese chocolate mousse

Simply process cottage cheese until smooth, then add sweetener, cocoa powder, and vanilla extract—no cooking required, and no chilling necessary either. You can make it ahead, too, if you’d like; spoon it into bowls and refrigerate for up to three days.

- In a food processor, process the cottage cheese on high speed until smooth, 1 to 2 minutes, stopping to scrape the sides of the bowl as necessary. Add the monk fruit sweetener, cocoa powder, and vanilla; process until well combined, 30 seconds to 1 minute. Spoon into bowls and serve.
