Coronation chicken salad

Ingredients
Cooked skinless chicken breast
500 g, sliced
Red capsicum
1 medium, thinly sliced
Lebanese cucumber
1 medium, halved lengthways, diagonally sliced
Mango
1 medium, thinly sliced
Snow pea sprouts
100 g, trimmed
Avocado
½ large, (80g) chopped
Light whole egg mayonnaise
⅓ cup(s), (100g)
Mango chutney
2 tbs
Curry powder
¼ tsp
Instructions

Arrange the chicken, capsicum, cucumber, mango and snow pea sprouts on a serving platter. Top with the avocado. Season with salt.

Combine the mayonnaise, chutney, curry powder and 2 tablespoons of water in a bowl. Drizzle over the salad and season with pepper.
