Coffee-glazed chocolate brownies

We like to make these dark, rich brownies by hand using a whisk and spatula. If you prefer to use an electric mixer, beat together all the ingredients except the flour mixture and walnuts. Then stir in the nuts and flour using a wood spoon until just combined. The espresso spiked glaze adds more moisture and richness to the brownies, and finishes them off with the perfect, eye-catching color contrast. Pop these treats in the oven as you're starting your dinner prep; take them out to cool when you sit down to eat, and then whip up the glaze and serve these unforgettable coffee and chocolate squares only minutes after you clear the last plate.

Plain wholemeal flour

Instant coffee powder

Cocoa powder

Dark chocolate
30 g, 70% cocoa
Canola oil

Brown sugar

1 medium, lightly beaten
Walnuts
¼ cup(s), (25g), chopped
Skim milk
¾ tsp, heated
Icing sugar
1½ tbs
Oil spray
1 x 3 second spray(s)

Preheat oven to 180°C. Lightly spray a 20cm square cake pan with oil.

In a small bowl, whisk together wholemeal flour, plain flour, baking powder, and a pinch of salt. In a cup, stir together 2 tablespoons of boiling water and ¼ teaspoon of coffee powder until powder is completely dissolved. In a medium bowl, whisk together cocoa, coffee mixture, and vanilla. Set aside.

In a small microwavable bowl, microwave chocolate on High for 20 seconds or until melted (see tip). Whisk in oil until smooth. Whisk in brown sugar until combined. Whisk chocolate mixture into cocoa mixture. Whisk in egg until combined. Add flour mixture and walnuts and stir until just blended.

Pour batter into prepared pan. Bake for 9-10 minutes or until a skewer inserted into the centre comes out with a few moist crumbs clinging. Cool completely in pan on a wire rack.

To make glaze: In a cup, stir together remaining coffee powder and heated milk until powder is completely dissolved. Add icing sugar and stir until mixture forms a smooth paste. Using a small spoon, drizzle glaze over brownies. Cut into 12 bars.
