Cobb salad with ranch dressing

With the goodness of avocado, chicken, egg and vegies, this salad will definitely fill you up at lunch time and it’s also fantastic as a quick dinner to enjoy mid-week.


Ingredients
Olive oil
2 tsp
Shortcut bacon
125 g, chopped
Cos lettuce
4 cup(s), (2 baby cos)
Cherry tomatoes
200 g, or grape tomatoes
Avocado
1 medium
Cooked skinless chicken breast
2 medium
Boiled egg(s)
4 medium, soft boiled, halved
Ranch dressing, light
80 ml, (2/3 cup)
Instructions

Heat oil in a small non-stick frying pan over medium-high heat. Cook bacon, stirring, for 5 minutes or until browned.

Meanwhile, chop lettuce, tomatoes, avocado and chicken. Arrange in serving bowls with bacon. Top with egg and drizzle with dressing. Serve.
