The flavour combination that the apple and walnuts create really takes this classic to a whole new level. For a more modern twist, swap the apple for pear.

Ingredients

Red apple, unpeeled

3 medium, cut into wedges

Celery

3 stick(s), thinly sliced

Walnuts

⅓ cup(s), (35g), coarsley chopped

Fresh flat-leaf parsley

⅓ cup(s), leaves

99% fat-free, plain or natural yoghurt, unsweetened

¼ cup(s), (60g)

Light whole egg mayonnaise

2 tbs

Lemon juice

1 tbs

Instructions

Place apple. celery, walnuts and parsley in a large bowl.

Whisk yoghurt, mayonnaise and lemon juice in a small bowl. Season with salt and pepper.

Add dressing to apple mixture and toss to combine. Serve.
