Take one bite of this wrap and it will quickly become a staple in your weekly lunch repertoire

Ingredients

Cooked skinless chicken breast

60 g, shredded

Carrot(s)

½ small, grated

Lebanese cucumber

medium, thinly sliced

Green shallot(s)

2 individual, thinly sliced

Sweet chilli sauce

2 tsp

Flaxseed oil

1 tsp

Rocket

15 g

Fresh coriander

5 g

Whole grain wrap

1 small, (45g)

Instructions

  1. Place chicken, carrot, cucumber and shallots in a medium bowl. Combine sweet chilli sauce and oil in a small bowl. Drizzle sauce mixture over chicken mixture and toss to combine.
  2. Place wrap on a flat surface and top with rocket, chicken mixture and coriander. Roll to enclose filling. Serve.

Notes

TIP: Flaxseed oil has a nutty flavour and is rich in essential fatty acids. It is sold in the health-food section of most supermarkets or health-food stores and should be stored in the fridge and not heated (it will damage the healthy fats). If unavailable you can use canola or sunflower oil.
