Chilli chicken, chickpea and rocket salad
Cooked skinless chicken breast
140 g, chopped
Canned chickpeas, rinsed and drained
1 125g can
1 individual, thinly sliced
½ medium, finely chopped
25 g, baby, leaves
- Place the chicken, chickpeas, shallot, capsicum and rocket in a bowl and toss to combine.
- Combine the lime, sambal oelek, oil and paprika in a small bowl with 1 teaspoon of hot water. Add the dressing to the salad and season with salt and freshly ground black pepper. Toss to combine.
