Ingredients
Mango chutney
1½ tbs
99% fat-free, plain or natural yoghurt, unsweetened
150 g
Curry powder
2 tsp
Lemon juice
1 tbs
Canned chickpeas, rinsed and drained
2 400g can, (2 x 400g cans)
Fresh coriander
1 tbs, finely chopped, plus extra to serve
Sultanas
25 g
White sourdough bread
4 slice(s), (4 x 40g slices), toasted
Rocket
40 g, baby variety
Lemon(s)
1 medium, wedges, to serve
Instructions

Combine chutney, yoghurt, curry powder and juice in a large bowl. Add chickpeas, chopped coriander and sultanas. Season with salt and pepper and stir to combine.

Top each slice of bread with rocket and chickpea mixture. Sprinkle with extra coriander and serve with lemon wedges.
