Looking for a new way to serve up chicken? Add a simple salsa to turn a simple chicken breast into a fruity, tasty and fresh dish.

Ingredients

Brown rice, dry

cup(s), (130g)

Skinless chicken breast

640 g

Mango

1 medium, chopped

Red capsicum

1 medium, or green capsicum, chopped

Red onion

¼ medium, finely chopped

Fresh red chilli

1 whole, deseeded, finely chopped

Fresh coriander

2 tbs, leaves, chopped, plus extra to serve

Lime juice

1 tbs

Fish sauce

2 tsp

Olive oil

2 tsp

Oil spray

1 x 3 second spray(s)

Instructions

  1. Cook rice in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain.
  2. Meanwhile, lightly spray a chargrill pan or barbecue with oil and preheat over medium-high heat. Season chicken with salt and pepper. Cook for 3-4 minutes each side or until cooked through.
  3. Combine mango, capsicum, onion, chilli, coriander, juice, fish sauce and oil in a small bowl. Top with chicken salsa and serve with rice, extra coriander and lime wedges.

Notes

SERVING SUGGESTION: Steamed snow peas and broccoli.
