Chicken tacos

These easy tacos can be whipped up in 15 minutes. Garnish with fresh coriander.


Ingredients
Skinless chicken breast
400 g, thinly sliced
Hard taco shell
8 regular, (8 x 14g)
Tomato-based salsa
4 tbs
Seasoning
50 g, (spice mix)
Coleslaw mix, without dressing
200 g
Avocado
1 medium, halved, stone removed, chopped
Fresh coriander
½ cup(s)
Oil spray
1 x 3 second spray(s)

Lightly spray a large frying pan with oil and heat over high heat. Cook the chicken, stirring occasionally, for 4 minutes or until browned. Add the spice mix and ½ cup (125ml) water. Stir until smooth. Reduce the heat and simmer for 1 minute or until sauce thickens.

Meanwhile, heat taco shells following packet instructions.

Fill hot taco shells with coleslaw mix, chicken mixture and avocado. Drizzle with salsa from taco kit and top with coriander to serve.
