Chicken souvlaki

Go Greek for a light Mediterranean meal. These skewers are a perfect addition to any barbecue or great grilled indoors.


Ingredients
Skinless chicken breast
300 g, thickly sliced
Seasoning
4 tsp, Greek
Wholemeal pita bread
120 g, (2 x 60g each)
Red onion
½ small, thinly sliced
Tomato(es)
1 medium, chopped
Lebanese cucumber
1 medium, chopped
Oil spray
1 x 3 second spray(s)
Instructions

Place chicken and Greek seasoning in a medium bowl, tossing well to coat. Thread chicken slices onto 4 skewers.

Lightly spray a barbecue or chargrill pan with oil and heat to medium-high. Add skewers and cook for 4–5 minutes each side or until chicken is cooked through.

Place pita bread on serving plates and top with skewers, onion, tomato and cucumber. Serve with mixed leaf salad.
