Chicken crepes with cottage cheese and chives

Ingredients
97% fat-free cottage cheese
250 g
Fresh chives
1 tbs, chopped
Rocket
80 g, baby
Olive oil
1 tbs
Crepe
4 individual, (4x50g), frozen, French-style
Baby spinach
60 g
Cooked skinless chicken breast
200 g, shredded
Instructions

Combine the cottage cheese and chives in a small bowl. Season with salt and pepper.

Place the rocket in a large bowl. Season with salt and pepper. Drizzle with the oil and toss to coat.

Heat crepes following packet instructions. Divide among serving plates. Place the spinach leaves along the centre of each crepe and top with the chicken and the cottage cheese mixture. Fold up the sides of each crepe and roll to enclose filling. Serve with rocket salad.
