Chicken caesar pasta salad

Even if you don’t like salads, we bet you like a caesar salad. This recipe replaces croutons with wholemeal pasta for a more filling and fibre-rich meal that you’re sure to enjoy.


Ingredients
Wholemeal pasta, dry
110 g, (penne variety)
Skinless chicken breast
250 g, cut into thin strips
Cos lettuce
1 baby, coarsely chopped
Cherry tomatoes
200 g, halved
Reduced-fat caesar dressing
2 tbs
Oil spray
1 x 3 second spray(s)
Instructions

Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain and cool.

Meanwhile, lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook chicken, turning occasionally, for about 5 minutes or until golden and cooked through. Set aside to cool for 5 minutes.

Toss lettuce, tomatoes, pasta and chicken in a large bowl to combine. Divide between 2 serving bowls. Spoon over dressing and season with salt and pepper to serve.
