Chicken cacciatore with mashed potato

Cacciatore is a classic Italian dish that is well balanced with the flavours of tomato, olives and capers.


Ingredients
Oil spray
3 x 3 second spray(s)
Skinless chicken drumstick
245 g, (buy 270g), fat trimmed
Chicken thigh, skinless, raw
440 g, (buy 500g), fat trimmed, halved
Shortcut bacon
3 slice(s), (buy 100g), fat trimmed, finely chopped
Brown onion
1 medium, finely chopped
Celery
1 stick(s), finely chopped
Carrot(s)
2 medium, thinly sliced
Garlic
2 clove(s), crushed
Canned diced tomatoes
800 g, (2 x 400g cans)
Brown sugar
1 tsp
Balsamic vinegar
1 tbs
Black olives, drained
40 g, kalamata, (1/4 cup)
Capers, rinsed, drained
1 tbs, in vinegar
Potato(es)
420 g, (500g peeled), cut into 2cm pieces
Skim milk
⅓ cup(s), (80ml)
Snow peas
400 g, trimmed
Fresh flat-leaf parsley
2 tbs, finely chopped

Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook chicken, in batches, for 5 minutes or until browned all over. Transfer to a large saucepan. Re-spray pan with oil, add bacon and cook for 3 minutes or until browned. Place in saucepan with chicken. Re-spray pan with oil. Add onion and celery and cook for 5 minutes or until softened. Add to saucepan along with carrot, garlic, tomatoes, sugar and vinegar and bring to the boil. Reduce heat and simmer, covered, for 40 minutes.

Add olives and capers and cook for a further 10 minutes or until chicken is cooked. Transfer chicken to a serving dish. Bring sauce to the boil and boil for 5 minutes or until reduced and thickened. Spoon over chicken.

Meanwhile, boil, steam or microwave potato until very tender. Mash together with milk and season with salt. Steam or microwave snow peas until tender.

Serve cacciatore with mashed potato and snow peas and sprinkle with parsley.
