Chicken and tzatziki pita pocket

A flavour-packed chicken filling in pocket bread makes a great portable sandwich for lunch on the go.


Ingredients
Cooked skinless chicken breast
100 g, coarsely chopped
Cucumber
½ medium, (Lebanese, finely chopped)
Cherry tomatoes
50 g, (halved)
Low fat tzatziki
1 tbs
Wholemeal pita bread
68 g, (1 x small round)
Baby spinach
15 g, (1/2 cup)
Instructions

Place the chicken, cucumber, tomato and tzatziki in a medium bowl and stir to combine. Season with salt and freshly ground black pepper.

Cut a slit through one side of the pita bread to form a pocket. Stuff the spinach leaves and chicken mixture into the pocket. Serve.
