Chicken and spinach omelette

Ingredients
Baby spinach
50 g
Cooked skinless chicken breast
75 g, torn
Egg(s)
2 medium
Skim milk
1 tbs
Ground nutmeg
¼ tsp, (Pinch)
Garlic powder or flakes
¼ tsp, Pinch (optional)
Fresh flat-leaf parsley
1 tbs, coarsely chopped

Place baby spinach in a microwave silicone omelette maker. Close and microwave (70% power) for 45 seconds. Open and drain spinach well in a sieve, pushing with spoon to remove excess water. Set aside.

Lightly beat eggs and milk. Add egg mixture, nutmeg, and garlic powder if using, to omelette maker. Season and stir to combine. Add chicken. Microwave (70% power) for 2 – 2 ½ minutes or until eggs are just set.

Top one half with spinach and half the parsley. Using a spatula, fold omelette to enclose spinach. Transfer omelette onto a warm plate. Sprinkle with remaining parsley.
