Chicken and blue cheese burgers

Ingredients
Chicken breast mince
500 g
Apple(s)
½ medium, grated
Red onion
¼ small, finely chopped
Panko breadcrumbs
2 tbs
Fresh sage
1 tbs, finely chopped
Chilli sauce
3 tsp, hot variety
Worcestershire sauce
3 tsp
Blue vein cheese
65 g, crumbled
Buttermilk
1½ tbs
Low-fat mayonnaise
2 tsp
Wholemeal sandwich thins
4 thin, (4 x 40g thins), split, toasted
Tomato(es)
1 medium, sliced
Butter lettuce
1 cup(s), shredded, 4 leaves
Oil spray
2 x 3 second spray(s)

Combine chicken, apple, onion, breadcrumbs, sage, chilli sauce and Worcestershire sauce in a large bowl. Season with salt and pepper. With damp hands, shape mixture into four 2cm-thick patties. Lightly spray patties on both sides with oil.

Preheat a chargrill or barbecue over medium heat. Cook patties for 4-5 minutes each side or until golden and cooked through.

Meanwhile, combine cheese, buttermilk and mayonnaise in a small bowl, stirring until smooth. Season with salt and pepper. Spread blue cheese sauce over sandwich thin bases. Top with patties, tomato, lettuce and sandwich thin tops.
