Ingredients

chicken breast mince

500 g

apple

½ medium, grated

red onion

¼ small, finely chopped

panko breadcrumbs

2 tbs

fresh sage

1 tbs, finely chopped

chilli sauce

3 tsp, hot variety

worcestershire sauce

3 tsp

blue vein cheese

65 g, crumbled

buttermilk

1½ tbs

low-fat mayonnaise

2 tsp

wholemeal sandwich thins

4 thin, (4 x 40g thins), split, toasted

tomato(es)

1 medium, sliced

butter lettuce

1 cup(s), 4 leaves

oil spray

2 x 3 second spray(s)

Instructions

  1. Combine chicken, apple, onion, breadcrumbs, sage, chilli sauce and Worcestershire sauce in a large bowl. Season with salt and pepper. With damp hands, shape mixture into four 2cm-thick patties. Lightly spray patties on both sides with oil.
  2. Preheat a chargrill or barbecue over medium heat. Cook patties for 4-5 minutes each side or until golden and cooked through.
  3. Meanwhile, combine cheese, buttermilk and mayonnaise in a small bowl, stirring until smooth. Season with salt and pepper. Spread blue cheese sauce over sandwich thin bases. Top with patties, tomato, lettuce and sandwich thin tops.

Notes

Tip: Serve with sweet potato wedges.
