Ingredients

Rolled oats, dry

140 g

Apple(s)

1 small, cored, grated

Unsweetened almond milk

550 ml

Almond extract

¼ tsp, (3-4 drops)

Cherries, pitted, frozen

250 g, thawed

Orange rind

1 tsp, finely grated

Flaked almonds

1 tbs, toasted

Instructions

  1. Place oats and apple in a large bowl and stir to combine. Add almond milk= and almond extract and stir until combined. Cover and place in fridge to chill overnight.
  2. Before you’re ready to serve, make the compote. Place cherries and rind in a medium saucepan. Bring to a boil, then reduce heat and simmer for 1-2 minutes or until cherries are softened and just heated through. Drain and discard 1 tablespoon of liquid, then roughly crush cherries with a fork, keeping some whole.
  3. Divide oat mixture between bowls. Serve topped with cherry compote and flaked almonds.

Notes

A dollop of plain unsweetened soy yoghurt will add creaminess.
