Cheese dip with veggie bites

Dunk fresh vegies into a creamy fondue-style dip for a snack packed with vitamins and flavour.

Ingredients

Baby corn

115 g, halved

Baby carrot

4 individual, (1/2 bunch)

Broccoli

200 g, cut into small florets

Green string beans

150 g

Red capsicum

½ medium, thickly sliced

Light Swiss cheese

90 g, (3/4 cup) chopped

Plain flour

2 tbs

Vegetable stock

1 cup(s), or chicken stock (250ml)

Instructions

  1. Boil, steam or microwave corn, carrots, broccoli and beans, separately, until just tender. Drain. Refresh under cold water and drain. Arrange corn, carrot, broccoli, beans and capsicum on a platter.
  2. Place cheese and flour in a small bowl and toss to coat. Place stock in a small saucepan over high heat and bring to the boil. Reduce heat and add cheese mixture. Whisk for 1–2 minutes or until smooth. Pour into a serving bowl and sprinkle with pepper. Serve with vegetables (see note).

Notes

Serve immediately as the cheese mixture sets and thickens on standing.
