Cheat's slow cooker pesto chicken tortellini soup

This satisfying soup contains only five ingredients—and it requires zero chopping. Store-bought pesto flavours the broth with basil, garlic, and parmesan, and all you have to do is stir it in.

Ingredients

Salt reduced chicken stock

6 cup(s), (1.5L)

Basil pesto

½ cup(s), (130g)

Skinless chicken breast

650 g

Fresh cheese tortellini or ravioli

300 g, (1 x 300g packet)

Baby spinach

280 g, (1 x 280g packet)

Instructions

  1. Add chicken stock, pesto and chicken to a 5.5L slow cooker. Season with salt and pepper. Cover with lid and cook for 6-8 hours on Low, until chicken is tender. In a slow cooker, stir together the chicken stock, pesto, salt, and black pepper. Add the chicken. Cover and cook until the chicken is tender, 6 to 8 hours on Low or 3 to 4 hours on High.
  2. Remove chicken from the slow cooker and allow to cool slightly in a large bowl. Change heat setting to High. Add the tortellini and cover and cook for a further 10-15 minutes, until the pasta is tender. Shred chicken in the bowl using 2 forks. Season with salt and pepper. Add the chicken and spinach to the slow cooker and turn off heat. Serve.
