Cheat’s ratatouille

Ingredients
Olive oil
1 tsp
Brown onion
½ medium, thinly sliced
Red capsicum
1 medium, thinly sliced
Garlic
1 clove(s), sliced
Canned diced tomatoes
1 cup(s), (250g)
Zucchini
1 small, thinly sliced
High fibre wholemeal bread
2 slice(s), (2 x 35g slices), toasted
97% fat-free cottage cheese
⅓ cup(s), (80g)
Fresh flat-leaf parsley
1 tbs, chopped
Instructions

Heat oil in a medium saucepan over medium heat. Cook onion, capsicum and garlic, stirring, for 6 minutes or until softened. Add chopped tomatoes. Bring to the boil then simmer, with lid askew for 10 minutes.

Add zucchini and cook for another 5 minutes. Season.

Serve with toast spread with cottage cheese, sprinkled with pepper and parsley.
