Ingredients

White self-raising flour

1 cup(s), (150g)

99% fat-free plain yoghurt

1 cup(s), (240g)

Tomato passata

cup(s), (80g)

Fresh basil

cup(s)

Red capsicum

1 medium, thinly sliced

Red onion

1 medium, thinly sliced

Bocconcini

75 g, sliced

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C. Lightly spray 2 baking trays with oil.
  2. Sift flour into a large bowl. Add yoghurt and a pinch of salt and mix with a wooden spoon until mixture comes together to form a soft dough. Knead dough on a lightly floured surface for 1 minute or until smooth.
  3. Divide dough into 2 even balls. Roll out 1 ball to a 25cm round. Repeat with remaining dough to make 4 rounds.
  4. Place rounds on prepared trays and spread with passata. Top with basil, capsicum, onion and bocconcini. Bake for 15 minutes, swapping trays halfway through cooking, or until crisp and golden.

Notes

Serve with baby rocket leaves.
