Chargrilled tropical fruit skewers with coconut

Ingredients
Mango
50 g, cut into 2 cm pieces
Pineapple
50 g, cut into 2 cm pieces
Paw paw or papaya
50 g, cut into 2 cm pieces
Kiwifruit
1 medium, 2 slices, halved
Apricot jam
2 tsp
Shredded or desiccated coconut
2 tsp, toasted
Oil spray
1 x 3 second spray(s)
Instructions

Preheat a chargrill over high heat. Thread pineapple, mango, pawpaw and kiwifruit, alternately, onto 2 wooden skewers (see note). Brush jam over both sides of skewers and lightly spray with oil.

Cook skewers for 1 minute each side or until lightly charred. Serve sprinkled with coconut.
