Celeriac, caramelised onion and thyme mash

This is delicious served with a lean beef steak and a rocket and pear salad dressed with balsamic vinegar and shaved parmesan.

Ingredients

Olive oil

1 tsp

Brown onion

1 medium, thinly sliced

Celeriac

1 medium, peeled, cut into 2cm pieces

Fresh thyme

2 tbs, (3 sprigs), leaves picked

Instructions

  1. Heat oil in a medium saucepan over medium heat. Add onion and stir to coat. Cover and reduce heat to low. Cook for 5 minutes. Remove lid. Cook, stirring occasionally, for 3-5 minutes or until onion is slightly golden. Remove from pan and set aside.
  2. Add celeriac to pan. Cover with water. Bring to the boil over medium-high heat. Cook for 20 minutes or until tender. Drain. Return to pan.
  3. Use a hand-held blender to process until a coarse puree forms. Stir in onion and thyme. Season with salt and pepper.
