Cauliflower margherita pizza

A homemade cauliflower pizza base adds a healthy dose of veggies to a traditional margherita pizza.


Ingredients
Cauliflower
400 g, (about ½ whole)
Egg(s)
2 medium
Grated parmesan cheese
⅓ cup(s), (25g)
Tomato passata
½ cup(s), (130g)
Tomato paste
1½ tbs
Dried oregano
½ tsp
Dried thyme
½ tsp
Tomato(es)
2 medium, sliced
Bocconcini
50 g, sliced
Fresh basil
2 tbs, leaves

Preheat oven to 180°C. Line a baking tray with baking paper.

Process cauliflower in a food processor until fine crumbs form. Transfer to a large bowl. Add eggs and parmesan and stir to combine. Season with salt and pepper. Spread cauliflower mixture over prepared tray to form a 5 mm thick base (about 33 cm x 33 cm). Bake for 20 minutes, or until golden.

Combine passata, tomato paste, oregano and thyme in a bowl. Season with salt and pepper.

Spoon tomato mixture over pizza base. Top with tomato slices and bocconcini. Bake for 15 minutes or until golden. Sprinkle with basil. Cut into 8 slices to serve.
