Ingredients

Reduced fat oil spread

100 g

Golden syrup

2 tbs

Rolled oats, dry

2½ cup(s), (225g)

Egg(s)

2 medium, lightly beaten

Carrot(s)

2 medium, finely grated

Sultanas

¼ cup(s), (40g)

Orange rind

1½ tsp, finely grated

Mixed spice

1½ tsp

Instructions

  1. Preheat oven to 180°C. Melt spread in a large saucepan over low heat. Brush a little melted spread over base and sides of a 30cm x 20cm (base measurement) baking tin. Line base and sides with baking paper.
  2. Stir golden syrup into melted spread. Add oats, eggs, carrots, sultanas, rind and mixed spice to golden syrup mixture and stir until well combined.
  3. Spoon mixture into prepared tin and bake for 20 minutes or until a skewer inserted in centre comes out clean. Set aside in tin for 30 minutes to cool before turning out onto a clean board. Cut into bars.
