Carrot cake bliss balls
12 individual, pitted
Dry rolled oats
50 g, roughly chopped
70 g, finely grated
Vanilla bean extract, alcohol free
Shredded or desiccated coconut

- Place dates in a large heatproof bowl. Cover with boiling water and set aside to soak for 10 minutes, or until slightly softened. Drain.
- Process dates, oats, pecans, carrot, chia seeds, ginger, cinnamon and vanilla in a food processor until well combined. Transfer mixture to a bowl. Cover and chill in fridge for 30 minutes.
- Place coconut on a large plate. Roll the mixture into 25 balls and roll in coconut to coat.
