Ingredients

Fresh dates

12 individual, pitted

Dry rolled oats

50 g

Pecans

50 g, roughly chopped

Carrot(s)

70 g, finely grated

Chia seeds

3 tsp

Ground ginger

1 tsp

Ground cinnamon

1 tsp

Vanilla bean extract, alcohol free

1 tsp

Shredded or desiccated coconut

Instructions

  1. Place dates in a large heatproof bowl. Cover with boiling water and set aside to soak for 10 minutes, or until slightly softened. Drain.
  2. Process dates, oats, pecans, carrot, chia seeds, ginger, cinnamon and vanilla in a food processor until well combined. Transfer mixture to a bowl. Cover and chill in fridge for 30 minutes.
  3. Place coconut on a large plate. Roll the mixture into 25 balls and roll in coconut to coat.

Notes

Tip: Keep in an airtight container in the fridge for up to 2 week.
