This Caribbean chicken tastes so good because of its tasty little sauce! Made from apple cider vinegar, soy sauce, brown sugar, chilli, garlic, ginger and all spice. Such a simple dish that’s packed full of flavour.

Ingredients

Apple cider vinegar

2 tbs

Soy sauce

1 tbs

Brown sugar

3 tsp

Fresh red chilli

1 whole, finely chopped

Garlic

2 clove(s), crushed

Fresh ginger

1 tsp, grated

Ground allspice

½ tsp

Green shallot(s)

4 individual, finely chopped

Skinless chicken drumstick

8 individual, lovely legs (Buy 8x85g)

Lentils, canned, rinsed, drained

1 400g can

Broccolini

2 bunch(es), chopped

Oil spray

2 x 3 second spray(s)

Instructions

  1. Combine vinegar, soy sauce, sugar, chilli, garlic, ginger, allspice and half the shallot in a jug. Set aside 1 tablespoon of sauce mixture for lentils.
  2. Lightly spray a large frying pan with oil and heat on medium-high. Cook chicken, turning occasionally, for 5 minutes or until browned. Add sauce mixture and 2 tablespoons of water and bring to the boil. Reduce heat to low and simmer, covered, for 10 minutes or until chicken is cooked through.
  3. Meanwhile, lightly spray a medium saucepan with oil and heat on medium. Cook remaining shallot, stirring, for 2 minutes or until softened. Add lentils, broccolini, reserved sauce mixture and 1/3 cup (80ml) water and cook, covered, for 2-3 minutes or until broccolini is tender. Serve lentil mixture with chicken and drizzle over any pan juices.

Notes

SERVING SUGGESTION: Lime wedges and steamed baby carrots.
