Caramelised onion and pepper beef fillet

Caramalised onions make a sweet and simple marinade for succulent beef fillets. Use your side of roast potatoes top mop up the extra sauce

Ingredients

Beef fillet (tenderloin), raw

400 g, fat trimmed, (buy 500g)

Brown onion

30 g, (2 tbs caramelised onion)

Pepper

1 tbs, (cracked black)

Baby potatoes

400 g, halved

Olive oil

1 tbs

Fresh thyme

1 bag(s), (4x sprigs)

Extra light sour cream

¼ cup(s), (60g)

Horseradish cream

1 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Spread beef with onion and sprinkle with pepper. Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook beef, turning, for 5–7 minutes or until browned. Place in a medium baking dish and bake for 25 minutes for medium-rare or until cooked to your liking. Transfer to a plate. Cover beef with foil and set aside to rest for 20 minutes before slicing thickly.
  2. Meanwhile, place potatoes, oil and thyme on a large baking tray and toss to combine. Bake in oven with beef for 35–40 minutes or until potatoes are golden and tender.
  3. Combine sour cream and horseradish in a small bowl. Serve with beef and roasted potatoes.

Notes

SERVING SUGGESTION: Watercress and steamed sugar snap peas.Caramelised onions are available in jars from the gourmet or condiments section of most supermarkets or specialty food stores.
