Caramelised bananas with maple pecan crumble

For a sweet and nutty dessert, whip up our caramelised bananas.

Ingredients

Rolled oats, dry

30 g

Shredded or desiccated coconut

2 tbs

Pecans

20 g, (2 tbsp)

Brown sugar

2 tbs

Banana, lady finger or sugar

4 individual, peeled, halved lengthways

Maple syrup

2 tbs

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Spread oats on a baking tray. Bake for 8–10 minutes or until toasted and golden, adding coconut and pecans for last 5 minutes of cooking. Set pecan crumble aside to cool.
  2. Preheat a chargrill or barbecue over high heat. Sprinkle sugar over cut side of bananas. Cook bananas, cut-side down, for 2–3 minutes or until sugar caramelises. Turn and cook for 1–2 minutes or until heated through. Transfer to serving bowls or plates.
  3. Drizzle grilled bananas with maple syrup and sprinkle with pecan crumble.

Notes

Lady finger bananas are shorter and thicker than regular bananas and hold their shape well when cooked. If unavailable, choose firm bananas that are only just ripe.
