Capsicum, zucchini and tuna pasta sauce

Mix bright vegetables, salty capers and canned tuna through your favourite pasta for a fast feed that will be ready in less than 20 minutes


Ingredients
Olive oil
1 tbs
Red capsicum
1 medium, thinly sliced
Yellow capsicum
1 medium, thinly sliced
Zucchini
1 medium, thinly sliced
Garlic
1 clove(s), crushed
Capers, rinsed, drained
2 tsp
Lemon juice
2 tbs
Tuna, canned in springwater, drained
165 g, (185g can)
Fresh flat-leaf parsley
½ cup(s), chopped
Dry pasta
250 g
Instructions

Heat olive oil in a non-stick frying pan over medium high heat. Add red and yellow capsicum and cook, stirring, for 2 minutes.

Add zucchini and cook, stirring, for 3–4 minutes or until softened. Add garlic, baby capers, lemon juice and tuna.

Cook, stirring, for 2 minutes or until heated through. Remove from heat. Stir in parsley leaves. Serve tossed with pasta cooked following packet instructions or until tender.
