300 g, cut into 8 thin slices

4 baby, halved
Shaved parmesan cheese
½ cup(s), (40g)
Instructions
1
Combine tomato, coriander and half the juice in a small bowl.
2
Preheat a barbecue over medium-high heat (see note). Cook corn on grill, turning, for 12–15 minutes or until tender. Using a sharp knife, remove kernels from cobs. Discard cobs.
3
Cook tortillas on grill for 30 seconds each side or until warmed through. Wrap in foil to keep warm.

Meanwhile, drizzle flat plate with 1 teaspoon oil. Cook capsicum and onion, stirring, for 5 minutes or until tender. Place kernels, capsicum and onion in a medium bowl and toss to combine.
5
Sprinkle spice mix over both sides of tofu. Drizzle flat plate with remaining oil. Cook tofu for 2 minutes each side or until golden and warmed through.
6
Spread avocado over half of each tortilla. Top with corn mixture, tofu and tomato salsa. Fold to enclose filling. Serve with lettuce sprinkled with parmesan and remaining juice.
