Ingredients

Orange sweet potato (kumara)

600 g, unpeeled, cut into long wedges

Turkey breast mince

400 g

Zucchini

1 large, (180g) coarsely grated

Caramalised onion relish

160 g

Iceberg lettuce

1 cup(s), shredded, 4 leaves

Lebanese cucumber

1 medium, peeled into ribbons

Tomato(es)

2 medium, thinly sliced

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat oven to 220°C. Line a baking tray with baking paper. Place potato, in a single layer, on prepared tray. Lightly spray with oil. Bake for 45 minutes or until golden and tender.
  2. Meanwhile, combine turkey, zucchini and half the onion relish in a bowl. Season with salt and pepper. Shape mixture into four 2cm-thick patties.
  3. Lightly spray a medium frying pan with oil and heat over medium-high heat. Cook patties, turning, for 6-8 minutes or until browned and cooked through.
  4. Place patties in lettuce leaves. Top with cucumber, tomato and remaining onion relish. Serve with sweet potato.

Notes

ADD IT: • 45g wholemeal bread roll. • Replace lean skinless turkey mince with lean skinless chicken breast mince.
