Bunless turkey burger with sweet potato chips
orange sweet potato (kumara)
600 g, unpeeled, cut into long wedges
2 x 3 second spray(s)
turkey breast mince
1 large, (180g) coarsely grated
Always Fresh Relish, Caramelized Onion
160 g, (⅔ cup)
1 cup(s), 4 leaves
1 medium, peeled into ribbons
2 medium, thinly sliced
- Preheat oven to 220°C. Line a baking tray with baking paper. Place potato, in a single layer, on prepared tray. Lightly spray with oil. Bake for 45 minutes or until golden and tender.
- Meanwhile, combine turkey, zucchini and half the onion relish in a bowl. Season with salt and pepper. Shape mixture into four 2cm-thick patties.
- Lightly spray a medium frying pan with oil and heat over medium-high heat. Cook patties, turning, for 6-8 minutes or until browned and cooked through.
- Place patties in lettuce leaves. Top with cucumber, tomato and remaining onion relish. Serve with sweet potato.
