Bruschetta with broad bean and feta topping

Ingredients
Frozen broad beans
500 g
Lemon zest
2 tsp, finely grated, plus extra to serve
Fresh mint
2 tsp, finely chopped, plus extra leaves to serve
Bruschetta (WW recipe)

Reduced fat feta cheese
120 g, crumbled
Lemon(s)
1 medium, wedges to serve
Instructions

Cook beans in a large saucepan of boiling water for 2 minutes. Drain, cool slightly, then peel. Coarsely mash beans in a medium bowl. Season with salt and pepper. Stir in zest and mint.

Spread bean mixture over bruschetta. Sprinkle with feta, extra lemon zest and mint leaves. Serve with lemon wedges.
