Broccolini and tofu stir-fry

This wholesome quickie is full of flavour but only uses a handfull of ingredients.


Ingredients
Peanut oil
1 tbs
Brown onion
1 medium, thinly sliced
Fresh ginger
1 tbs, grated
Broccolini
2 bunch(es), coarsely chopped
Firm tofu
500 g, drained, cut into 2cm cubes
Vegetable stock
⅓ cup(s), (80ml)
Vegetarian stir-fry sauce
⅓ cup(s), (80ml)
Cooked white rice
2 cup(s), (340g)
Instructions

Heat oil in a large wok or frying pan over high heat. Stir-fry onion, ginger and broccolini stalks for 2 minutes or until the onion is softened.

Add tofu, stock, stir-fry sauce and broccolini heads. Stir-fry for 2 minutes or until hot.

Divide rice among serving bowls and top with the broccolini mixture. Serve.
