As the barbie sizzles, offer guests a creamy dip with crunchy crudités.

Ingredients

Cooked broad beans

2 cup(s), (300g)

Low-fat ricotta cheese

250 g

Garlic

1 clove(s), crushed

Lemon juice

2 tbs

Fresh thyme

2 tsp, (lemon), plus extra sprigs to garnish

Instructions

  1. Boil, steam or microwave broad beans following packet instructions. Drain and refresh in a large bowl of cold water. Drain. Peel beans and discard skins.
  2. Process beans in a food processor until finely chopped. Add ricotta, garlic, juice and thyme leaves. Process until almost smooth. Serve with extra thyme.

Notes

SERVING SUGGESTION: Baby carrots (halved), radishes (halved), red capsicum (thickly sliced) and celery (cut into sticks).
