Flip over a Mexican-style breakfast this morning. This filling meal is ready in just ten minutes!

Ingredients

Oil spray

1 x 3 second spray(s)

Flour tortilla(s)

2 small

Egg(s)

2 medium

Baby spinach

60 g

Light cheddar cheese

cup(s), grated, (40g)

Tomato relish

¼ cup(s), (60g)

Instructions

  1. Lightly spray a medium non-stick frying pan with oil and heat over medium heat. Break 1 egg into the pan and cook for 1 minute. Top with half the spinach and half the cheese, then place a tortilla on top. Cook for 2–3 minutes or until egg is cooked to your liking and tortilla softened.
  2. Turn out onto a plate, fold tortilla in half, then cut into wedges if you like. Repeat with remaining egg, spinach, cheese and tortilla. Serve with a dollop of tomato relish.

Notes

TIP: If you like, you can substitute the baby spinach in this breakfast tortilla with baby rocket leaves instead.
