Typically thought of as an evening appetiser, bruschetta is just as delicious in the morning. Flavour packed and easy to make, start your day with an Italian classic


Ingredients
Asparagus
1 bunch(es), trimmed, halved diagonally
Cherry tomatoes
8 individual, halved
White sourdough bread
130 g, toasted, (2x65g slices)
Light cream cheese
2 tbs
Fresh basil
1 tsp, leaves to garnish
Oil spray
1 x 3 second spray(s)
Instructions

Preheat oven to 200°C or 180°C fan-forced. Line a baking tray with baking paper. Place asparagus and cherry tomatoes, cut-side up, on prepared tray and lightly spray with oil. Bake for 8 minutes or until asparagus is just tender.

Toast bread and spread with cream cheese. Top with asparagus and tomatoes. Serve sprinkled with basil.
