Blueberry banana cream

Indulge in this creamy, fruity dessert


Ingredients
Gelatine
2 tsp, powder
Banana(s)
2 medium, chopped
99% fat-free, plain or natural yoghurt, unsweetened
1 cup(s), (240g)
Vanilla essence
1 tsp
Fresh lemon rind
½ tsp, finely grated
Lemon juice
1 tbs
Fresh blueberries
100 g, fresh or thawed from frozen, to serve
Instructions

Place 2 tablespoons boiling water in a small jug and sprinkle with gelatine. Whisk with a fork until gelatine has dissolved. Place bananas, yoghurt, vanilla, rind, juice and gelatine mixture in a food processor. Process for 1 minute or until smooth.

Spoon mixture into four ½-cup (125ml) capacity serving glasses. Refrigerate for 2 hours or until set. Top with blueberries to serve.
