The classic combination of bacon, lettuce and tomato becomes even more satisfying when you add fried egg.

Ingredients

Shortcut bacon

2 slice(s), (2 x 25g slices)

Egg(s)

1 medium

Multigrain bread roll

1 medium, split

Butter lettuce

20 g, (2 leaves)

Tomato(es)

1 medium, vine-ripened (3 slices)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a medium non-stick frying pan with oil and heat over medium heat. Add the bacon and cook for 2–3 minutes or until crisp.
  2. Meanwhile, cook the egg (in the same pan as bacon) for 2–3 minutes or until egg white is set and yolk is still soft.
  3. Preheat grill on high. Grill roll, cut-side up, for 1–2 minutes or until lightly browned. Top the toasted bread roll base with the lettuce, tomato, bacon and egg. Sandwich with remaining roll half. Serve.
