This burger really is the B.E.S.T. idea for brekkie!

Ingredients

Extra lean beef sausage

125 g, (1x125g thick sausage)

Shortcut bacon

54 g, (4x15g slices) fat trimmed

Tomato(es)

2 medium, Roma variety, halved lengthways

Egg(s)

2 medium

Turkish bread

120 g, (2x60g slices) split

Baby spinach

1 cup(s), (20g)

Tomato chutney

2 tbs

Oil spray

2 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook sausage and bacon, turning occasionally, for 3–4 minutes or until sausage is cooked through and bacon is crisp. Slice sausage thinly. Transfer to a plate with bacon and cover to keep warm. Cook tomatoes for 1–2 minutes each side or until tender.
  2. Lightly spray same cleaned pan with oil and heat over medium heat. Pan-fry eggs for 3 minutes or until cooked to your liking.
  3. Toast bread on both sides. Top each base with spinach, tomato, sausage, bacon, egg and chutney. Sandwich with bread tops and serve.

Notes

SERVING SUGGESTION: Steamed asparagus, plus 200g button mushrooms (sliced) pan-fried in 1 teaspoon olive oil.
