Ingredients
Lean beef mince, raw
500 g
Red onion
½ medium, grated
Sundried tomato pesto
1 tbs
Garlic
1 clove(s), crushed
Olive oil
1 tbs
Brown onion
2 medium, thinly sliced
Barbecue sauce
¼ cup(s), preferably smoky (60ml)
Cos lettuce
1 cup(s)
Wholemeal bread roll
150 g, 2x75g, halved, toasted
Tomato(es)
2 medium, sliced
Beetroot, canned in brine, drained
1 cup(s), (160g)
Instructions

Combine mince, red onion, pesto and garlic in a large bowl. Season with salt and freshly ground black pepper. Using your hands, shape mixture into 4 patties.

Preheat an oiled barbecue hotplate over medium heat. Cook brown onion for 5–10 minutes or until soft. While onions are cooking, cook patties for 2–3 minutes on each side or until just cooked through. Brush with barbecue sauce while cooking.

Place lettuce on halved rolls. Stack with patty, beetroot, tomato and onion.
