Bring a little Middle Eastern magic to your table with these tasty koftas.

Ingredients

Burghul, dry

45 g, or cracked wheat

Lean beef mince, raw

400 g

Red onion

1 small, grated

Pine nuts

2 tbs, chopped

Ground allspice

2 tsp

Lebanese cucumber

2 medium, sliced

Cherry tomatoes

250 g, halved

Fresh flat-leaf parsley

2 tbs, chopped

Green shallot(s)

4 individual, thinly sliced

Lemon juice

2 tbs

Eggplant dip

cup(s), to serve

Wholemeal lebanese bread

2 small, warmed, cut into quarters

Instructions

  1. Place the cracked wheat in a small heatproof bowl, pour over enough boiling water to cover and stand for 15 minutes. Squeeze out as much excess water as possible, transfer to a large bowl.
  2. Add the mince, onion, pine nuts and allspice to the cracked wheat and mix well. Shape mixture into 12 oval-shaped koftas and flatten slightly
  3. Preheat a chargrill or barbecue over medium-high heat. Cook the koftas, turning for 6-8 minutes or until browned and cooked through.
  4. Meanwhile, combine the cucumber, tomatoes, parsley, shallots and juice in a medium bowl.
  5. Serve the koftas and salad with a dollop of babaganoush and with the warmed Lebanese bread on the side.

Notes

TIPS: You can substitute the babganoush with hommous or tzatziki. Heat the bread in the microwave on HIGH (100%) for 20 seconds or wrap in foil and heat on barbecue for 5 minutes.Warm bread wrapped in foil in a preheated 180˚C oven for 10 minutes or in the microwave on HIGH (100%) for 20 seconds.
