Make like a Mexican with this taste sensation. Put all the ingredients in the middle of the table and let everyone help themselves for a food fiesta!

Ingredients

Lime juice

2 tbs

Worcestershire sauce

1 tbs

Beef rump steak, raw

480 g, (600g), thinly sliced

Olive oil

1 tbs

Red capsicum

1 medium, thinly sliced

Green capsicum

1 medium, thinly sliced

Yellow capsicum

1 medium, thinly sliced

Ground cumin

1 tsp

Ground coriander

1 tsp

Wholemeal tortilla

4 small, warmed

Iceberg lettuce

50 g, shredded

Instructions

  1. Combine juice and Worcestershire sauce in a large glass or ceramic dish. Add beef and toss to coat. Heat half the oil in a large non-stick frying pan over high heat. Add capsicums and cook, stirring, for 5 minutes or until softened. Transfer to a bowl.
  2. Drain beef, reserving marinade. Heat remaining oil in same pan over high heat. Add drained beef and cook, stirring, for 5 minutes or until browned. Add cumin and coriander and cook, stirring, for 1 minute. Return capsicum and reserved marinade to pan and boil for 1 minute.
  3. Warm tortillas following packet instructions. Place tortillas on serving plates and top with lettuce and beef mixture. Serve with lime wedges and coriander.

Notes

SERVING SUGGESTION: Green salad, plus guacamole made with 1 small avocado (mashed), 1 tablespoon finely chopped fresh coriander leaves and 1 tablespoon lime juice.TIP: Meat is easier to slice if it’s slightly frozen. Place fresh meat in the freezer for 30 minutes to firm up before slicing with a sharp knife. If using frozen meat, slice when only half thawed.
