Beef, babaganoush and rocket open sandwich
The great thing about an open sandwich is that you get twice as much ‘filling’ with the same amount of bread. So your meal (and fullness feeling) lasts longer.
Soy and linseed bread
2 slice(s), (70g) toasted
Deli-sliced roast beef
50 g, (rare roast)
1 medium, vine ripened, sliced
½ medium, grated
½ cup(s), (15g)
- Lay toast on a flat surface. Spread 1 side of each slice of toast with babaganoush. Top with beef, tomato, carrot and rocket leaves. Serve.
Babaganoush is a popular Middle Eastern dip made with roasted eggplant. It is available with other dips in the chilled section of most supermarkets.
