Ingredients

Shortcut bacon

55 g, (buy 60g), fat trimmed, sliced

Wholemeal lebanese bread

2 large, (2 x 100g)

Tomato passata

½ cup(s), (130g)

Mushrooms

150 g, button variety, thinly sliced

Red capsicum

½ medium, thinly sliced

Red onion

½ medium, thinly sliced

Cooked skinless chicken breast

200 g, shredded

Reduced-fat mozzarella cheese

1 cup(s), grated, (120g) shredded

Barbecue sauce

Instructions

  1. Preheat oven to 200°C. Line two baking trays with baking paper.
  2. Heat a small non-stick frying pan over medium heat. Cook bacon, stirring, for 3–4 minutes or until just browned.
  3. Place Lebanese bread on prepared trays. Spread passata over bread. Top with mushroom, capsicum, onion, chicken and bacon. Season with pepper. Sprinkle with mozzarella and drizzle with barbecue sauce. Bake for 15 minutes or until bases become crisp and golden.

Notes

TIP: Serve with salad of lettuce, thinly sliced red onion and baby roma tomatoes, drizzled with balsamic vinegar. Cover and refrigerate any leftover pizza and serve cold or warmed for lunch the next day.
