Basil, capsicum and almond pesto

Add a dollop of tasty homemade pesto to a plate of pasta or as topping for meat or fish. It's an instant dinner winner!


Ingredients
Fresh basil
1 cup(s)
Garlic
1 clove(s), finely chopped
Fresh red chilli
1 whole
Red capsicum
1 medium, roasted, not in oil
Romano cheese
25 g, grated
Blanched almonds
¼ cup(s)
Olive oil
2 tbs
Instructions

Place fresh basil leaves, garlic, red chilli, red capsicum, ¼ cup (25g) grated romano cheese and almonds in a food processor. Process until roughly chopped.

With the motor running, gradually add olive oil and process until almost smooth. If pesto is too thick, add a little warm water. Season with salt and freshly ground black pepper.
