Basil, capsicum and almond pesto
Add a dollop of tasty homemade pesto to a plate of pasta or as topping for meat or fish. It's an instant dinner winner!
1 clove(s), finely chopped
Fresh red chilli
1 medium, roasted, not in oil
25 g, grated
- Place fresh basil leaves, garlic, red chilli, red capsicum, ¼ cup (25g) grated romano cheese and almonds in a food processor. Process until roughly chopped.
- With the motor running, gradually add olive oil and process until almost smooth. If pesto is too thick, add a little warm water. Season with salt and freshly ground black pepper.
