Barbecued mango with macadamia brittle

Make the most of fresh mango with this delicious recipe.

75 g, coarsely chopped (1/2 cup)

- Line a baking tray with baking paper. Place sugar in small saucepan and add 2 tbs (40ml) water. Dissolve sugar over low heat for 2-3 mins. Increase heat to high and boil rapidly for 7-8 mins or until mixture is golden brown. Working quickly, pour caramel onto baking paper then sprinkle with macadamias in a single layer. Leave for a few mins to harden then break into pieces.
- Preheat barbecue over high heat. Cut down either side of mango seeds to form eight cheeks. Cook mango cheeks, cut side down for 2 mins or until charred. Serve mango with macadamia brittle and lime.
