Barbecued mango with macadamia brittle

Ingredients
Caster sugar
½ cup(s), (110g)
Raw macadamias
75 g, coarsely chopped (1/2 cup)
Mango
4 medium
Lime(s)
1 medium, quartered

Line a baking tray with baking paper. Place sugar in small saucepan and add 2 tbs (40ml) water. Dissolve sugar over low heat for 2-3 mins. Increase heat to high and boil rapidly for 7-8 mins or until mixture is golden brown. Working quickly, pour caramel onto baking paper then sprinkle with macadamias in a single layer. Leave for a few mins to harden then break into pieces.

Preheat barbecue over high heat. Cut down either side of mango seeds to form eight cheeks. Cook mango cheeks, cut side down for 2 mins or until charred. Serve mango with macadamia brittle and lime.
